Yummy Pi (Now with pictures!)

Happy Pi Day.
Pi, Greek letter π, is the symbol for the ratio of the circumference of a circle to its diameter. π = 3.1415926535... ( I memorized 50 digits of this beloved mathematical constant in middle school for an extra credit competition in math class, but I cannot recite more than a dozen now.)

While the American Pie Council thinks that January 23rd is National Pie Day, March 14th is truly the appropriate day to celebrate with a fat slice of pie as it’s the day of the year that corresponds with the first three digits of pi.
I woke up super early this morning and could think of nothing better to do than bake pie for the guys. They will be the lucky recipients of a Blueberry Pie and a Pecan Pie later this morning.

UPDATE:

I had to share pictures. I am inordinately proud of how the Blueberry Pie turned out, especially considering the fact that the Pecan Pie just wasn’t right. Not bad but just not quite as it should be, and I can't figure out why. I was told by JP that as a non-Southerner I shouldn't even attempt to make Pecan Pie; however, if I ever have a Key Lime Pie, I could bring it over.
(The only lattice crust I have ever made, and the loveliest pie I have ever made.)

In keeping with the π/pie theme, I made Chicken Pot Pie for supper.It's been a tasty day.

Neither you nor I can become one of these guys. The friars are a known appreciative audience for my baking adventures. (And two of them knew the reason for the pie.)
If you were closer, we could have a ladies' tea with treats.

Oh friar guys; got it. Ok, well I just wanted pie. :) The blueberry looks absolutely delicious and the lattice crust is gorgeous! What's your recipe for the pot pie goo?

Quick And Easy Chicken Pot Pie

2 cans cream of (something) condensed soup
16 oz. bag frozen mixed vegetables, thawed
4 oz. can mushroom pieces
2 cups cooked chicken, diced
¼ cup milk
½ teaspoon thyme
½ teaspoon pepper
pie crust

Combine first 7 ingredients. Pour into pie plate; top with pie crust. Bake at 375 degrees for 45-50 minutes. Cover with tented foil about half-way through. Allow to cool and let set for 10 minutes before serving.
